It’s been like dejá vu for me this week, going back to the days when I brought home my babies from the hospital. The visitors wanting to stop by and meet the newest addition; the attention to our new baby’s needs; the drop everything to make sure she’s not causing any trouble; the attempts to potty train her or, in this case, wean her from paper training. Well, I suppose in that regard, having a puppy is more like raising a toddler. So let’s say the dejá vu experience combines both the infant and the toddler phases of parenthood.
My schedule has definitely been thrown off by this new arrival, but I know from years of parenting experience that soon enough I will get into a new routine and this will feel very familiar. I don’t even mind getting up a little earlier in the morning, and I really mean just a little earlier since all I’ve given up is the snooze on my alarm. But one of the necessary adjustments this week has been cooking dinner even more quickly for the family, or finding shortcuts for the recipes I planned in my naive pre-puppy days.
Last night’s dinner recipe for Beef Tostadas with Mango Salsa, from Food Network Magazine delivered all the speed I needed. Louisa helped me a little bit but, even if she hadn’t, this recipe delivered on its promise of 15 minute prep and 5 minute cook time. And while I wouldn’t have thought to top the cooked ground beef mixture with a tropical salsa, I really liked the combination of flavors, which delivered lots of punch from minimal effort. Everything a new mom could want.
