It’s taking some time, but I’m attempting to build a vegetarian no-brainer dinner repertoire. When I was cooking meals that included meat, I had at least a half dozen, no recipe-required dinners that I could toss together on busy nights. Herbed, roasted pork tenderloin, roasted chicken breasts, beef and vegetable stir fries, BLT sandwiches, sausage and pasta! These were meals that could be thrown together quickly when I barely had the energy to eat, let alone cook.
I’m kind of starting from scratch with our new vegetarian kitchen. I would say that Caprese sandwiches rank as the first of my new easy, vegetarian dinner repertoire. You can’t get much easier or more flavorful than fresh bakery bread filled with fresh mozzarella cheese, fresh tomato slices and fresh basil. This week I even slathered on some prepared pesto that I remembered to pick up when I was food shopping. You heard me – I purchased store-made pesto instead of mixing my own. Pesto is so time consuming to make.
And then, this week’s sandwiches had a little extra surprise inside, just for me and Joe. I fried up a few slices of pancetta and added them to our sandwiches too. As I said when this whole vegetarian thing started back in July, I wasn’t prepared to give up pork meats. Sorry little piggies. You just taste too good. And this was an easy way to have my pork and eat it too without the need to cook a different meal for Louisa.
Caprese Sandwich Surprise… now that I have figured out a way to add back in a little bit of meat to my vegetarian meals, I wonder how many other “surprises” I can come up with along this vegetarian road.
